Ingredients:

1 cup plain Greek nonfat yogurt

3/4 cup Trader Joe’s organic strawberries (frozen)

1 banana (frozen)

1 cup fat free (skim) milk

1/2 cup water

1 tbsp. Trader Joe’s Organic Chia Seed

Appliances:

Skinnygirl by BELLA Personal Blender

Directions:

Blend together until desired consistency is reached.

Thanksgiving at my parents’ is always nice. Every year, my Mom and Aunt cook some traditional dishes together and we serve ourselves, buffet style. We sit around the dining room table and share what we are thankful for.

Some things that I am always thankful for are:

Good health

Friends and family

My job

A great support network

The government for helping me out, financially (even though it’s not perfect, it does help)

A roof over my head and food in my fridge

Tonight, I bring to you a link to the spiced cider recipe that I posted three years ago. We enjoyed this warm, golden liquid with our meal this evening. It was served in a pretty China teapot.

(I don’t have a photo of the teapot right now. Just be sure to serve yours in a pitcher that can withstand hot temperatures.)

Berry Happy SmoothieSo, I’ve been sick for two weeks now.  What started out as a standard cold turned into a sinus infection and the next thing I know, I’m spending a night checked into the fabulous five-star hotel called the “Emergency Room.”  The day I had started taking my prescription antibiotics was the night I took a trip in the ambulance.  I had been prescribed them the day before when I visited my primary physician.  I never had a sinus infection that caused a fever before and I was shaking so bad that I could barely dial the phone and had trouble breathing.  Thankfully, I was not having a reaction to the medication.

I had the Lap-Band surgery about four and a half years ago, so taking medication in its pill form can be difficult for me at times.  This is especially the case when they are horse pills like the antibiotics I am currently on. For those of you who are not familiar with the term, “horse pills” are medication in the form of tablets or capsules that are very large in size.  The large size of horse pills can make them exceptionally difficult to swallow.

It helps me to drink a smoothie while taking medication.  So today I made what I am calling a “Berry Happy Smoothie.”  This smoothie made me feel good while I was drinking it that I just had to post the recipe for my (and your) future reference!

The key to making this smoothie is the cottage cheese.  I know what you’re thinking, “Cottage cheese?  What!”  My mom questioned it too when I suggested she add cottage cheese to the one she made yesterday.  Cottage cheese is a thickener to a smoothie recipe.  If you don’t like the cottage-cheesy taste, you can add flavor extracts to it, such as vanilla.  You can also thicken your smoothie with xanthan gum.  You might find that in the gluten-free isle.

Ingredients

  • 3/4-1 c Cottage cheese
  • 5.3 oz (150 g) Low-fat plain (original) or coconut blended Greek style yogurt, like Chobani Greek Yogurt
  • Blueberries
  • Strawberries, strawberry preserves or red raspberry preserves
  • Fat-free milk or milk alternative
  • Ice cubes
  • Honey

Utensils

  • Blender
  • Drinking glass (tall)
  • Straw (optional

Directions

  1. Blend the cottage cheese using “pulse” until it is creamy.
  2. Add the yogurt and ice and continue to “pulse” until the ice is blended in.
  3. Add the fruit and/or fruit preserves and “pulse” until those are blended.
  4. Add the milk and honey.
  5. Add more ice if needed.

There’s a bite in the air.

The nights are chilled,

Daily outdoor adventures slowly return to indoor family fun nights.

Snacktime Babble, Episode 4: Define Your Brunch Food


I’m having a party.  A celebration.  A graduation party, and a birthday party, if you will, but also a party to celebrate the multitude of September birthdays in my family.  We are fall and back-to-school people, after all.  Or we were, until us children flew the nest.  Now we go back to visit the folks every fall for the Jewish Holidays and to celebrate some September birthdays.  This year it’s going to be a little different.  Lot’s of new things are happening in my family, including the fact that this party will be held at the folks’ new house.

In the meantime, I’d like to weigh in on some opinions for some party fare.

Are jello shots a brunch food, or should we stick to mimosas? What do you think?

Homemade Mulled Apple Cider


Homemade Mulled Apple Cider (With Vanilla and Nutmeg)

  • Servings: 8 US cups
  • Difficulty: easy

Ingredients:

  • 1/2 gal cider or apple juice
  • 1 orange or tangerine
  • Cloves
  • Cinnamon
  • Nutmeg
  • 1/2 a cap or less pure vanilla extract (optional)
  • Sliced apples (optional)

Directions:

  1. Pour cider into pot.
  2. Zest the peel of the orange with a cheese grater. If you can’t zest, squeeze 1/8 – 1/4 orange and drop slice into pot to boil in with ingredients.
  3. Add a small amount of each spice into the pot. If you have coffee filters or empty tea bags (or other porous material you can boil in high temperatures), use these to hold the spices inside. You can tie the coffee filter and let it sink to the bottom. Otherwise, you may want to strain your cider before serving.
  4. Once the cider has reached a rolling boil, you are done!
  5. Garnish with sliced apples.

Notes:

Some people own tea straining contraptions that you can boil your spices inside.  If you have one of these, you can use it.
